Caramel Nut Clusters

  • 1 lb. of Peters Caramel
  • 1 lb of Guittard coating chocolate
  • Pecan halves, almonds, or other nuts.


Melt caramel in microwave or on stove top. Microwave: One minute on high, take out and stir, then ½ power for another minute, stir, 1/2 power again. Repeat until caramel is melted and creamy. Have ½ inch thick piles of nuts on lined sheet pan, spoon caramel over nuts to form clusters. Do not allow clusters to flow together. Refrigerate for 15 to 20 min. to allow for caramel to set. Melt Guittard coating chocolate to spoon over clusters when caramel is set.

Refrigerate for 3 to 5 minutes.
